How to generate an ed25519 GPG key pair on macOS?

I've been searching but have not managed to figure it out. I have the latest version of GnuPG installed from Homebrew and I want to generate a key pair which does not expire and also uses the ed25519 algorithm. I'd also like it to be password protected.

Can anyone point me in the right direction, please?

GnuPG is cross-platform if I'm not mistaken, so it's docs are available from [GNU.org website for the software](https://gnupg.org/documentation/manuals.html).

AFAIK (at least through 2.2.27) for `--full-gen-key` you must add `--expert` to get the menu choices for ECC including ed25519. Note also ed25519 cannot do encryption; for that it is conventional to use a "curve 25519" (XDH) subkey with an ed25519 masterkey, like it is/was to use ElGamal with DSA.
