20.04.2 Server unreachable through LAN after some random time mqtt + node red + influxdb + grafana

i have this 20.04.2 vm on my esxi. it's like all the other ubuntu vms in my LAN. some cores, plenty of RAM, 50 GB lvm, vmxnet3 network adapter. it's sole purpose is mqtt, node red, influxDB and grafana. i installed unattended-upgrades, open-vm-tools, some ppa (influx and grafana) and dependencies for my 4 programs. nothing fancy. nothing weird. randomly my machine is unreachable. no ssh. no ping, no grafana. no node red. just plain unreachable. when i log in via esxi remote console, everything is fine. all works well, except network. only solution is to restart network adapter or reboot. can't find anything in journalctl and logs. any hint? any help here to have a closer look and which log to read carefully? any suggestions beside "periodic interface restart via cron" ?
