Ubuntu 20.04 will not boot even though boot repair says everything is fine

Installing Ubuntu 20.0.4 LTS on a 4TB hard drive on an older Asus Desktop M51AC (linked to the exact model on Amazon). I opted for the LVM encryption option. I used the default amd 64 iso (iso was downloaded on a 2014 Macbook pro laptop and image was created using balenaEtcher) provide by Ubuntu to create the image on a USB stick. I can boot to the "live ubuntu" from the USB stick but not to the newly installed hard drive that I installed 20.04 on. I checked the bios and the boot order seems fine - it looks like the BIOS is telling the system to boot from the hard drive.

What is possibly wrong and/or what are the first few diagnosis steps I should take beyond what I've done so far?
