Alert UUID=XXX does not exist. Dropping to a shell!

First time installing Ubuntu (or any distro) on an HDD. Last night I successfully installed and was using Ubuntu for a while and today I got an error when booting up. I could just reinstall it but that's kinda lame and I want to fix it myself (with your guys' help) if possible. Currently stuck in initramfs, unable to boot like a sad loser.

What I've tried:

  1. Check the System Configuration -> SATA Operation on my mobo. It is already in AHCI.
  2. I tried comparing blkid output with etc/fstab/ however either my fstab file is empty or I am not able to print it to the console properly in initramfs. (pretty sure it's empty tho)

Hardware and other OS Information: 500GB SSD: Windows 10 - 1TB HDD: Windows 10 - 80GB HDD: random pictures - 80GB HDD: Ubuntu

(Yes I have 2 80GB HDDs and 2 installations of Windows 10, pls no roasting ;( )

also note that yesterday I spent an hour configuring nvidia drivers because I have a geforce 1660 ti, I managed to get my GPU working correctly but I read somewhere that this error may related to proprietary drivers so I thought I should mention it.

I booted into Windows to check if the drive is dead or not however Windows Disk Management shows that the drive is alive and recognized.

I am nowhere close to good with linux and am unfamiliar with the shell commands. Any help is appreciated.
