Issues on Ubuntu Server 20.04 on VM within Vsphere 7.x

So I've been having multiple issues trying to have a stable VM with the Ubuntu Server 20.04. I have carefully followed install guides but after 24 hours of it being up, it just fails the next day, and everything I installed on it (Pi-Hole w/ Unbound) just doesn't work anymore. It's become quite frustrating but I'm also here to learn as I hope to install more of these VMs for services within my homelab. I'm also a NOOB with Ubuntu so I'm here to learn.

I'm using the ISO to for a VM on vsphere 7.x and after the initial install, I do an sudo update & install. This time around, I didn't install anything on it and left it as is. After 24 hours, this is what I get. Something always goes wrong with this. Any guidance or recommendations?

And now after I restarted the VM....I get this error....NO OS FOUND!!!!
