Assigning 2 IPs to Ubuntu Server

I have a server with ethernet being the primary source of internet. I have a plex server running and I can access it locally. I can't port forward coz I'm on CGNAT however I do have a cloud flare Zero Tunnel up and running. I want to access my plex server but I can't stream via cloud flare(It's extremely slow and not meant for streaming).

I was wondering if I could use the WiFi NIC and connect it to a different router (which has OpenVPN running and is connected to a VPS for port forwarding) and access plex through that.(That is after connecting to the VPS from a client device). I tried to test this theory locally but couldn't get it to work.

If anyone could let me know what I'm doing wrong or weather this whole idea just wouldn't work or provide a solution, it would be great.

I'm aware that I can just connect the whole server to the VPN but I don't wanna do that, hence the dual IP idea. Could it be as simple as routing Plex traffic through the NIC ?
