How to remove everything that is related to GUI and peripherals

I played a bit with gnome and a few things related to graphical interfaces, like X11 etc. Now I want everything removed except the core Ubuntu Server features (and the other web-related servers I configured already).

Where can I find a list of all the useless things, given that I already removed the main gnome packages in the past?

I can see some

keyboard-setup.sh 
x11-common 
console-setup.sh

in the list of services, but I'm not sure whether they're important or not.

Note: I'm running Ubuntu on a VPS and I'm not sure whether this is some addon from the provider...

my personal definition for this very specific use case (I fully agree with your statement, btw) is in the first paragraph and the question: everything related to GUI (that is not needed for ssh-ing into the server) is considered 'useless' in this question. The problem is that I'm not sure what I did installed while playing and what the VPS provider adds in the original image. For instance, I see LXD-owned process linked to mysql, and I'm too much of a noob to understand whether I caused this or not, since I'm not sure what was on the vps.
