How to build a L2TP VPN from Ubuntu to Ubiquiti UDM-PRO

What I'm Trying to Accomplish (in the end) : I have a Zabbix Server running on Ubuntu 20.04 and I want to SNMP some Ubiquiti UDM-Pros. These damn things don't allow much in the way of SNMP polling from the WAN, so you need to VPN into them then SSH into the device to pull info. This will also allow me to SNMP devices in the local network with ease as the Zabbix server will have access to basically everything as if it was local.

Problem : Can't seem to establish a L2TP connection from an Ubuntu 20.04 server (no GUI) to an Ubiquiti UDM-PRO

Error : "Error: Connection activation failed: Could not find source connection."

What I've Tried : Installed network manager, and Googled endless things. Everything is GUI based and this isn't working much for me. I've tinkered with endless settings, yadda yadda.

Wondering if anyone has a network manager config that'll accomplish this. I know the VPN works as I'm able to establish it on Windows machines with ease using the same credentials.
