Dual-boot on MacPro 2013 6,1 grub NOT booting ubuntu 20.04

On MacPro 2013 6,1 macOS + Ubuntu 20.04 dual boot worked fine for a year then perhaps some system update messed up grub. Now, macOS boots fine but I get stuck at the grub boot screen for ubuntu (even after I reinstall grub from LiveUSB) with error msg like ... Importing MOK states has failed: import_mok_state() failed : Invalid Parameter Continuing boot since secure mode is disabled.
Following this advice: How do I get the grub menu to show on a MacBook? if I remove the shim*.efi from /mnt/boot/efi/EFI/ubuntu using LiveUSB then I get the extra error msg: LoadImage failed: Not found DevicePath: PciRoot(0) ...... /\EFI\ubuntu\shimx64.efi ... and a paragraph of hex numbers.
I've also tried adding nomodeset to the grub config and reset NVRAM but the screen still gets stuck at grub boot msgs.
If I replace /boot/efi/EFI/BOOT/bootx64.efi with /boot/efi/EFI/ubuntu/grubx64.efi then at least I get a grub menu but it gives a blank black screen at grub boot when I select ubuntu and nothing happens. I've tried advanced options kernel 5.8 (recovery mode), it gives error msg like address NOT found (hex address)... kernel panic.
