Install Windows 10 dual boot on a second SSD without affecting Ubuntu 20.04

I've searched a few answers to this but they all seem a little old and with older versions of Ubuntu.

I have Ubuntu 20.04 running from an M.2 NVMe SSD. I've bought a second of the same SSD and would like to install Windows 10 and have it running as dual boot with the option to run Windows on boot (with Ubuntu being the default). I've seen people have removed the Ubuntu SSD and put the fresh one in and booted it to install Windows before reinstalling GRUB but wasn't sure if this was still possible in 20.04?

Safest way is to either disconnect Ubuntu drive or in UEFI change to disabled, so Windows cannot see it at all. Then reinstall Ubuntu drive & you may have to boot recovery drive entry or update Ubuntu UEFI entry. UEFI may forget entry for disconnected drives. And the `sudo update-grub` will find Windows. But Windows must be in same boot mode, since newer system, both should be UEFI. And Windows fast start up must be off.
