How do I change the u-boot settings on 21.04 desktop to boot the previous kernel (vmlinuz.old)

The last update/upgrade on my pi4 running Ubuntu has killed the display output. I get a kernel warning and stack dump in vc4_hdmi_read. The kernel completes booting but pi can only be accessed remotely.

The update changed the kernel version from 5.11.0-1017 to 5.11.0-1019.

What is the easiest way to boot from the previous version?
