Ubuntu 21.10 server install randomly crashes

Really not sure whats going on. I'm trying to install Ubuntu Server 21.10 on a new machine with an i5-11600 and a Gigabyte Z590 Gaming X motherboard. The installer however keeps crashing in two main places.

I've attached a video below but can't see any useful messages (as is the case with the other crash).

The crash results in the computer switching off and restarting entirely.

I ran a Manjaro install and successfully got to the initial screen.

What could be the problem? Would really appreciate any help I could get!
