How to get MATE desktop when logging on remotely?

I recently installed Ubuntu 22.04.1 on my Raspberry Pi and set my account to use the MATE desktop when I logged on from the physical console. (I really don't like the default desktop at all)!

Although my physical logons present the MATE desktop as desired, when I log on from a remote console (from Windows using the built in Remote Console application) - it brings up the default desktop instead of the MATE desktop that I want. There is no option on the remote console's logon screen to select any other desktop, as the physical console provides.

(Prior to getting the built in Windows Remote Console application to connect successfully, I tried to use VNC too - but didn't have much luck getting it to work at all - so I uninstalled it on both my Windows and Ubuntu machines. I really didn't like that the Windows component was just a 7 day "free trial").

Does anyone know how to force my remote console logon to use the MATE desktop instead of the default one? Thanks for any thoughts and suggestions you can provide!
