rare submenu behaviour

I use Ubuntu Studio 22.04.1 LTS.

Since a while (a month, or something) I can see a very rare behaviour of the submenu of some apps.

Normally, I hope to get a standard list, with grey (or something but white) background and black characters (very recognizable).

But, now I get what you can see in this image...

Why the white background color and not visible character options?

As you can see, the only readable line is the one where the cursor is. All the other options are not visible.

This was not this way before a month, or something.

How can I change this? Where is the control of this kind of things?

I don't use any "weird" customization. I just use the included Greybird-dark theme, GNOME-Human Icon theme and Bluebird window scheme. If to use that is a "customization", I didn't know it. But, it is this way since a lot of years. The submenu rare behaviour is only present here since a month or something. I don't know why.
