Keep getting logged out

I recently created a fresh install of Ubuntu 20.04 (20gb root, 50gb home, 64gb swap), and installed KDE-plasma desktop. After being on the KDE desktop, when installing some new bits of software (tested with apt and pip3), or moving relatively large files (> 20mb), both monitors black out and I'm kicked back to the login page with all the windows closed. Any idea what could be causing this? I've tested installing the same files on both the default DE bundled with Ubuntu 20.04 and KDE plasma and it only crashes out on KDE. I've attached a video below of the issue.

Sounds like a session crash. Read up on how to use `journalctl` to retrieve error messages so we have more specific info.
