Pre-defined users, can they be used to run processes

Can I ask what best practice is for using the pre-defined users on Ubuntu to run processes please?

Specifically is it ok to use the 'backup' user to run backup processes and assign it access to directories or should I create a new user in the range 1001+ to do this please? My concern would be that it would cause some underlying problems in the OS.
