Grub recovery shell right after installing Ubuntu 20.04 LTS on new drive alongside other drive with Windows 10 and VeraCrypt full system encryption

I installed Ubuntu 20.04LTS on a completely new drive (/dev/sdb) alongside Windows 10 with VeraCrypt, which is on /dev/sda. While installing I created a swap and an ext4 partition. The installation finished without problems and after rebooting I dropped into a grub recovery shell.

After that I tried to find the boot image using ls (hddx,x) but to no success. To make sifting through the drives easier I detatched the drive with windows. After rebooting only the bios opened and in the boot list there were still ubuntu and veracrypt. Which is wierd because I detatched the drive with VeraCrypt. Also after changing the boot order, my bios tells me that apparently I haven't made any changes to save. After "saving" and rebooting I'm back to the old bios configuration.

I then tried to detatch all drives but my bios still showed me ubuntu and VeraCrypt as my two boot options.

I also tried to reinstall ubuntu using the full disk in case I somehow messed up during partitioning but to no success. I did this the second time without the windows drive connected so there shouldn't be any interferances. Also while reinstalling ubuntu the installer found the first installation on /dev/sdb.

Booting from VeraCrypt still works. My mainboard is ASUS Z87 Expert with UEFI bios.
