How to set default screen resolution for display manager in 21.04

i'm running my Huawei Matebook (3000x2000) with two 27" Fujutsu Screens using an HP USB-3 dock.

I'm experiencing issues that on certain screen resolution combinations (e.g. 3000x2000 internal + 1 external screen with > FHD) the system hangs. Windows drivers don't even offer the combination because the load is too high for the hardware. Therefore i'm using a configuration of displays (within my own user) that enables 2 external displays only. (see linked monitors.xml)

My issue is that if the dock is connected during bootup the login screen auto configures one of these unuseable combinations. I always need to unplug before booting and only reconnect once logged in.

Resaeaching ways to set screen / display resolutions for my login window i tried: How do I change gdm3 login screen resolution? which basically asks to do

sudo cp ~/.config/monitors.xml /var/lib/gdm3/.config/

However it doesn't have any effect and disabling wayland does sound kinda strange especially as there is no commented line to uncomment in my settings file.

Any Advice on how to set correct screen usage / resolutions for my login window?
