How can i add an installer to a Cubic project to make my custom distro install itself?

I was playing around with Cubic to create my own distro. I used Ubuntu Server as base because it does not come bundled with all the GUI software and installed ubuntu-mate-core to it to have a desktop environment. The iso works perfectly fine, but I am now searching for a way to install this iso to my hard drive from a USB stick via an installer on the system (like a desktop icon or on startup, whatever is easier) without actually using Ubuntu Desktop as a base.

I have looked at Ubiquity which is Ubuntu Desktop's default installer, but I wasn't able to figure out how to integrate it in my project. I've also looked at Anaconda, but this confused me even more.

If an installer like that isn't easy to accomplish, what else can I do?
