I have an HP EliteBook 840 G1, following the HP specs the only possible GPU is the Radeon 8750 http://h10032.www1.hp.com/ctg/Manual/c04655205.pdf

And this is the precise model, by searching for the part number https://icecat.us/prefere/us/p/hp/h5g26et-abz-r+-+renew/elitebook-notebooks-840+g1-23120759.html

So the problem is that why lspci and all other system info tools are detecting a Radeon 8730?

You've provided no clues as to what Ubuntu product, or release/ISO you actually used? Are we to guess? and did you choose one appropriate for your hardware? as you provided no specifics of which Ubuntu product, which Ubuntu ISO, which kernel stack choice you made etc (*for Ubuntu 20.04 LTS for example (being the 2020-April release), I'm aware there are ISOs with five kernel stacks available at boot, but you didn't provide any actual specifics*)
