Assign the drive letter (/dev/sdb) manually

I have an old computer, I installed Ubuntu Server 20.04, it works perfectly but it changes the letter it assigns to the hard drives every time I start it and it deconfigures the automatic mounting. It has 5 hard drives.

Is there a way to fix the letter, so that when starting it does not change?

Example; /dev/sd(a) or whatever.

Deja Dup not backing up entire system

I installed Deja Dup and tried to do a complete back by selecting any folders I have installed to or edited files (config files etc) and discovered that I could not add specific folders like /etc because Deja Dup said it didn't have authorization to those folders.

I have 2 Asus Zenbook laptops running Ubuntu 20.04.3LTS (my current laptop and I kept my old laptop as an emergency backup system as I can't be without a laptop). I very rarely use the old one, but I run sudo ap-get update and sudo apt-get upgrade every 3-4 weeks.
